Chicken is one of the most popular and common types of poultry. Belongs to the pheasant family, the genus of comb chickens. The male hen is called the rooster, the chick is called the chicken. Banking jungle chicken is considered to be the progenitor of domestic chicken. Over the centuries of domestication, people were able to breed many different breeds.

Depending on the breed, chickens have different weights, approximately 0.8 - 5 kg, and also differ in feather color, egg color, size and some external features (characteristic of decorative breeds). Roosters are usually larger than females, with brighter plumage and a long tail. With age, spurs form on the legs of the rooster - bone outgrowths. Chickens and roosters have a beard and comb, which act as a thermoregulator and ensure normal blood flow to the skin. The comb of a rooster is much larger than that of chickens, it is hardly noticeable in chickens. The forms of the comb can be leaf-shaped with teeth along the edge, pod-shaped, etc. Despite the fact that chickens have wings, they are incapable of long and high flight.

The smallest representatives of the chicken breed on our shelves are gherkin chickens цыплята-корнишоны. They are no more than 24 days old, weigh 200-300 g and cook very quickly. Actually, chickens are called young chickens slaughtered up to six months of age, weighing no more than 700g.

Young birds aged 40-50 days, raised for meat (as opposed to laying hens), weighing from 1.5 to 2 kg are called broilers, from the English verb to broil, which means "roast on fire." Today, broilers account for over 62% of the world's total poultry meat production. бройлерами, от английского глагола to broil, что означает «жарить на огне». Сегодня на долю бройлеров приходится более 62% всего мирового производства мяса птицы.

The largest chickens are for stewing, at the age of 14-15 months, weighing up to 5 kg. Chickens over 15 months old become quite tough, and in the trade they are called soup. A small, yellowish-skinned chicken fed with corn compound is called cornish. Its tender and tasty meat has a light nutty flavor. The most delicious chicken is free-grazing, not in a cage on compound feed. Its meat is harsh, but it tastes amazing.
